Chicken Parmesan Recipe

I saw this on Facebook and knew right away that I had to try it. And y’all IT WAS AMAZE BALLS! I served it with homemade rolls and corn on the cob. Yum!

Ingredients

• 2 lbs boneless, skinless chicken breast

• 8 oz cream cheese, softened

• 1/2 cup sour cream or greek yogurt

• 4 cloves garlic, crushed through a garlic press

• 1/4 tsp salt

• 1/4 tsp ground black pepper

• 1/2 cup mozzarella cheese

• 1 cup freshly grated parmesan cheese (divided into 2 half cups)

To garnish (optional):

• Fresh chopped parsley (Which I didn’t do because of picky kiddos)

Instructions

1 Combine the softened cream cheese, sour cream, garlic, salt, pepper, and 1/2 cup of the parmesan cheese and mix well.

2 Lay the chicken breasts flat in a large baking dish. Spread the cheese mixture over the chicken, then sprinkle the mozzarella cheese, and remaining 1/2 cup of the parmesan cheese over the top.

3 Bake at 375˚F for 25-35 minutes or until the chicken reaches an internal temperature of 375˚F.

4 Garnish with fresh parsley and serve warm with your favorite sides. Enjoy!

Merry Christmas & Happy New Year

Not only am i super late posting this but I’ve been mia <for exciting reasons> from my blog. We have a lot going on and 2019 will be extremely full of new adventures. Some of which i will announce today and some of which will be a huge surprise last minute. Today I’m going to play catch up and there will be 3 posts going live on the blog. This one. A update on Ginny’s puppies. And a recipe.
First and foremost — merry late Christmas to y’all. I hope that the holiday brought you tons of joy and was spent with the ones that you love. Our christmases were bitter sweet since it was the first without papa and our final Christmas was postponed to New Year’s Eve night due to my grandma being ill but all in all it was lovely. We are blessed more than most with such big, close families.

My grandmas gift to the kids was the best. It was a playroom at her house.

Second — i have T W O business related announcements. Today the dirt work started on our feed store. Yes, we are opening up a feed store next to our tire shop. It’s been a long time coming and so perfect for our family. Some where for the kids to work when they are older. Some where easy to get cattle and horse feed, supplies, pet medications, ect. We are very excited. My other business related announcement has to do with magicallee made. I will now be offering customized and personalized products. Coffee cups, back packs, hats, shirts, mugs, coozies, aprons, ect. You name it, I can create it. I will be launching some of those things on New Year’s Day so stay tuned. Matching mommy/us shirts are my current favorite but here is a tiny peek of my Valentine’s Day shirt designs. They will be on red or black sleeved reglans:

My last announcement for this post is not really an official announcement but a teaser. We have doodles and poodles coming by spring so stay tuned for those details. Y’all do not even know how many exciting things and additions I have up my sleeve. Our year is hands down going to be the craziest yet.

Happy birthday to my love

There is so much that I could say about this guy. About his loyal and kind character. About his weird sense of humor and the odd way that he flirts with me. About his extremely strong work ethic. About his deep love for his babies and I. About the way that he drives me crazy. The way that he challenges me every single day and makes me want to be a better person. The way that he gives to others without pause. The way that he always answers his phone even when he knows that the person only calls because they want something. The way that he makes my world — no, the world — a better place. He is everything that I want for my daughters and exactly what I want my son to be like. I love him big time. Happy thirty-something birthday, B. You are literally my world 🖤

We celebrated Brian’s birthday last night with friends and tomorrow we will celebrate it with family. Today however, we are recovering/cleaning up from the good times of yesterday ha. Pizza, pitch, cake, drinks, and popcorn. Mostly popcorn. We literally had a fight with it hints the popcorn everywhere. I may or may not of laughed so hard that i peed my pants (thanks Cale) 😅

C l e a n — finally!

Elf on the Shelf: I love/hate it

For five years now we’ve had elves come to visit us during the month of December. I put a lot of time, effort, and cash into said elves doing crazy shit. If you know me you know that i love all things creative and diy. I’m one of those moms who enjoys moving our elves 99% of the time. However, that other 1% goes like this: Char, “Mom! Did you move my elf?” Me, “I could care less about that damn elf, charlee!” Ha. Love/hate. Some days are lazy elf days. Some days they make a whole fucking sleigh and 9 reindeer out of a pack of pop. Happy elffin December, moms. If you don’t do the elf thing, you’re living your best life. If you do do it, i suppose the giggles and grins every morning when your kids get up to find out what their elf was up to is worth it.

Holiday Home Tour

Today the kids are decorating their bedroom trees and Brian is putting up our outside lights which reminded me that i never shared my pictures from the holiday home tour last year. Today is also the one year anniversary of that tour so I thought that it was the perfect time to share footage from it:
We had so much fun preparing for it all and were thankful to of been asked to be apart of the cause. the home tour is a fundraiser for our school/students. If you are local to northeast Oklahoma there are 5 new locations in the tour tonight and tickets are still available. Contact me for more info.
